  • Cecilia Ibru on Preparing and Eating Garri
    November, 2012
One of the most important crops in Nigeria, the cassava root is an essential source of carbohydrates in the national diet. While many Americans are familiar with the root as the basis for tapioca, Nigerians usually consume cassava in the form of garri, a fermented flour.

Garri comes in several grades and types, but all are prepared in a similar fashion. Cassava roots are peeled, grated, and then left to ferment for several days. During the fermentation process, garri makers also press the product between boards in order to remove the water in the drying tubers. Thanks to modern technology, the garri-making process has now become increasingly mechanized, allowing for mass-produced garri.

The Standards Organization of Nigeria recognizes three distinct grades of garri: extra fine, fine, and coarse grain. In addition to separating types of garri by fineness, regional differences in preparation create different products. In Nigeria, red palm oil is often added to the garri before it begins fermenting, creating red or Bendel garri; another type is Ijebu-garri, which ferments for seven days and is generally fried before serving.

About Cecilia Ibru: The co-founder of the Michael and Cecilia Foundation, Cecilia Ibru has committed herself to helping the people of Nigeria. The Foundation has made food security an important part of its mission and has worked to develop ways to increase the production of cassava.
