About Jonathan SpeckA longtime crab fisherman, Jonathan Speck maintains membership in the National Fisherman Organization as well as operates his own seafood restaurant, Crab Wolf. In keeping with U.S. Food and Drug Administration regulations, Jonathan Speck received a specialized food-safety certification known Hazard Analysis Critical Control Point, or HACCP. This designation ensures that Jonathan Speck provides a food-safety management system to protect consumers from biological, chemical, or physical hazards that may otherwise occur in the food production process. Knowing that Jonathan Speck maintains HACCP certification allows customers to enjoy the health benefits of stone crab dishes at his restaurant, free from worry. According to the USDA, stone crab contains magnesium, selenium, and vitamin B6. It is also a low-fat source of protein. Jonathan Speck’s journey to the Everglades and the sea actually began on land. As a student at Rutgers, The State University of New Jersey, Mr. Speck studied Landscaping and Forestry. He received training as a firefighter and also worked in the Sequoia and Kings Canyon National Parks, where his duties called for him to identify and mark trees to be cut for conservation clearing.
