Growing up on a farm in Kansas, Mark Seyfert developed an interest in the science of animals and agriculture at an early age. As an undergraduate at Kansas State University in Manhattan, Kansas, Mark Seyfert majored in Animal Sciences and Industry and minored in Agricultural Economics. While earning his Bachelor of Science in Agriculture, Mark Seyfert participated in numerous extracurricular activities in order to gain more knowledge and experience. As an undergraduate student, Mark Seyfert worked with Farm Credit Services of Northeast Kansas Student Board of Directors; acted as Corresponding Secretary for the Block and Bridle Club; ; led the Agriculture Ambassadors program as vice president; and volunteered his time to Flint Hills Breadbasket.
After graduating summa cum laude with a Bachelor’s degree, Mark Seyfert enrolled in Kansas State University’s graduate program for Food Science. Mark Seyfert earned his Master of Science in 2003, writing his thesis on how “accelerated chilling and packaging in modified atmospheres affect color, microbial, and sensory properties of injection-enhanced beef round muscles.” As a graduate student, Mark Seyfert was the Secretary and Treasurer of the Animal Science Graduate Student Association, and an Executive Committee Member of the Food Science Graduate Association. Currently, Mark Seyfert is also a member of the American Meat Science Association and serves as a scientific reviewer for Meat Science and the muscle foods division of the Institute of Food Technologists.
Mark Seyfert is now the Quality Assurance Manager at Bob Evans Farms, Inc. in Columbus, Ohio. For the past five years Mark Seyfert has been moving up the ranks at Bob Evans Farms, Inc. developing new products; overseeing its suppliers and food safety programs, and ensuring that the equipment, operations, and products are always “best in class.”

    I provide support to the retail food products division of Bob Evans through vendor approval, regulatory compliance, and scientific testing. I oversee the suppliers of food ingredients to our production facilities as well as the producers of finished food products bearing our company's label. Other duties include overseeing distribution center programs, product shelf life and sensory testing, compliance with GFSI audits, product labeling compliance, and specification development. I have worked for the company a little over 4 years and been promoted twice during that time. In my current position, I have worked with procurement to identify over $100,000 in savings for my company while improving the safety and quality of associated ingredients. Work with suppliers to one of our plants has increased LEAN efficiencies from <20% to greater than 80%. Invited to present an educational session at 2010 Reciprocal Meats Conference in Lubbock, TX on Practical Applications in Meat Color Research Multi-faceted job that involves interaction with marketing (product label design and approval), procurement (vendor approval and monitoring), research and development (specification compliance, continuous product monitoring), operations (specification creation, regulatory compliance via labeling and HACCP, quality programs), sales (quality optimization), and consumer relations (solving problems and issues for our customers).
